THE GOOD: Good things about carbon in general - if properly seasoned, and used with adequate fat in frying, it will be non-stick. I pan-fried fish and then added some asparagus to the same pan, to let the fish cook through on low heat and cook the asparagus at the same time.

But if you just use small amounts of acidic it isn’t a problem at all, and you don’t have to worry about squeezing half a lemon into your sauce. I don't plan to use this pan for lemon or lime juice, wines etc to make pan sauces or tinned tomatoes etc - acidy stuff that removes the seasoning. We purchased the Matfer Bourgeat Carbon Steel Fry Pan so our reviewer could put it to the test in her kitchen. I dried it and warmed it on the gas hob before adding a teaspoon of vegetable oil, which it smeared about using a bunched fist of kitchen paper.While the pan requires a slightly tedious seasoning process right out of the box (potato skins are involved), the task is ultimately straightforward, leaving the pan with a beautifully smooth, dark coating that’s ready for cooking. It contains slightly less carbon than a regular cast iron pan, which allows it to be relatively thinner and lightweight yet maintaining all the qualities of cast iron. Out of the 11 carbon steel skillets I tested, Matfer Bourgeat gave the most impressive performance overall. The heat up time isn’t even so much affected, I can preheat on a bit higher setting than I would normally.

It seasons really well and becomes super non-stick in a short time, and not having any rivets that gets in the way is great. Then cook breakfast on it every day for a week as follows: (1) Preheat the oven to 500; (2) lightly oil the pan all over with grape seed oil; (3) Get the pan hot on the range and add a bit of butter; (4) cook scrambled eggs; (f) more butter / brown onions (5) brown a breakfast sausage; (6) wipe the pan down all over with a paper towel (thin layer all over and no food bits) including the handle; (7) pop the pan in the oven right side up and set a one hour timer. While I experienced no such issue using the current version of the pan on an induction cooktop, some users reported that theirs warped when heated too quickly over induction plates.The only thing anyone can do to these it to warp them with too high a heat - apart from that, it will last forever just by cooking with a little fat or oil and wiping. This particular pan only has about nine inches of cooking area whereas the top rim dimensions are more than 11 inches.
