When it comes to slicing pasta sheets into individual noodles, the Atlas 150 comes with a two-in-one cutter.The acrylic base is really nice because it’s smooth and you can easily wipe the clay crumbs from it. But if you want to stick with an Atlas, I recommend that you get an older (pre-2008) machine and then remove the fenders. If you use the pasta straight away, remember that fresh pasta takes as little as 2 minutes to cook in boiling water – but, if you wish, you can dry the pasta (in bundles or strands) and keep it in an airtight jar for up to a month. You merely remove the crank handle and attach a Pasta Drive motor to use a motor with the Atlas machines. We make our sourdough pasta either with a blend of white and wholegrain flour for extra fibre and nutritional benefits, or with our Botanical Blend flour in place of the wholegrain for diversity.
